Not quite baking...

It is Canada Day and I need to do SOMETHING to celebrate. So we made some club sandwiches (mmm bacon) and then I decided to tackle some Funnel Cakes! 


I haven't actually fried anything since we moved in here, which was last February! And I had never made these before. So I dug the oil out and got it going. Made up some pancake batter, from scratch of course. Not because I wouldn't use a packet, but because its a celebration and I was celebrating. Also, because you can't find good pancake mix here in England, so scratch is always easier! 


So I fried some up. And cooked some blueberries with a small amount of icing sugar. And topped with ice cream. Sorted! 




As you can see, my funneling technique needs a bit of work, but they were yummy anyway! Next time it does need some strawberries and caramel sauce! mmm....
